1/2 pint of fresh strawberries, hulled and quartered
1 ripe mango, diced
1/4 red onion, finely chopped
1/4 cup cilantro, finely chopped
1 jalapeno pepper, seeded and chopped
juice from 1 lime
salt to taste
In a large bowl, combine all your ingredients and mix well.
Refrigerate for at least 1/2 hour and drain before serving.
For citrus rub on fish, mix together
1 tsp lemon zest
1 tsp orange zest
1/4 cup fresh chopped parsley
2 tbsp fresh chopped tarragon
1/2 tsp black pepper
red pepper flakes (optional)
