Recipe of the Week: Quick and Easy Grilled Harissa Chicken
We made a quick mid-week dinner of some grilled chicken and veggies, served over couscous. Harissa is a spicy mix of hot peppers, garlic, coriander, and caraway. We made a paste by adding it to some greek yogurt. We also grilled up some zucchinis and made a little side of green beans and carrots sauteed with mustard seeds and curry leaves. This is a nutritious, and simple way to serve up a delicious dinner.
Ingredients
2 chicken breasts
2 tbsp harissa spice
4 tbsp greek yogurt
1-2 tbsp lemon juice
Directions
Mix harissa, yogurt, and lemon juice into a paste.
Marinate chicken breasts in harissa paste for at least 2 hours.
Preheat grill.
Grill 10-15 minutes per side, or until no longer pink.
Serve with a healthy helping of vegetables and a side of couscous.
