A month into the new year and we're still doing good with our weekly beans and fish diet resolutions. But this week, in an effort to make something different, I decided to cook up a red adzuki bean dessert. Red beans and tapioca in coconut milk is so easy to make. And the best part? This is actually a healthy dessert loaded with fiber and vitamins!
You only need 3 ingredients. Yup, just three. I used (half) a can of mashed red beans (I found this in our local Asian grocery store, and so far it's the one that works best for this recipe),

and a cup of tapioca (soaked overnight).
All you have to do is cook the tapioca in the coconut milk over medium-high heat. Stir continuously and do not allow the coconut milk to come to a boil. When the tapioca is done (about 10-15 minutes), add half a can of the mashed red beans and mix well.
You can serve this cold, but I definitely prefer it piping hot! :)
