Recipe of the Week: Coconut, Red Beans and Tapioca Dessert

A month into the new year and we're still doing good with our weekly beans and fish diet resolutions. But this week, in an effort to make something different, I decided to cook up a red adzuki bean dessert. Red beans and tapioca in coconut milk is so easy to make. And the best part? This is actually a healthy dessert loaded with fiber and vitamins!

You only need 3 ingredients. Yup, just three. I used (half) a can of mashed red beans (I found this in our local Asian grocery store, and so far it's the one that works best for this recipe), 

(Alternatively, you can also make your own red bean paste from dried adzuki beans using this recipe, and then cook up the dessert with the same directions)
a can of light coconut milk,


and a cup of tapioca (soaked overnight).


All you have to do is cook the tapioca in the coconut milk over medium-high heat. Stir continuously and do not allow the coconut milk to come to a boil. When the tapioca is done (about 10-15 minutes), add half a can of the mashed red beans and mix well.

You can serve this cold, but I definitely prefer it piping hot! :)
