Today's snack is salt and vinegar pumpkin seeds. Yes, they are delicious even if they are a mere substitute for the even more fabulous salt and vinegar chips. To make, simply toss 2 cups of pumpkin seeds with 1 tablespoon olive oil (or grapeseed oil is fine too), 4 tablespoons of balsamic vinegar, and 1-2 teaspoon salt. Spread on baking sheet and bake at 350F for around 20 minutes. Easy peasy.
