Recipe of the Week: Blueberry Coffee Cake

What do you do when you have 10 delicious pounds of blueberries?


Bake BLUEBERRY COFFEE CAKE and fill your house with that irresistibly charming vanilla scent!
Here's a simple recipe that works really well ...

Ingredients
1/4 cup butter
3/4 cup white sugar
1 egg
3/4 cup unsweetened coconut milk
1 tsp vanilla extract
2 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 cups fresh blueberries

(topping)
1/2 cup brown sugar
3 tbsp all-purpose flour
1 tsp ground cinnamon
1/2 cup chopped pecans
3 tbsp butter


Directions
Preheat oven to 375F. Grease a 9x9 inch baking pan.
Sift together flour, baking powder, and salt. Set aside.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg.
Add in flour mixture alternately with milk, mixing just until incorporated.
Gently fold in blueberries.
Pour batter into pan.

For streusel topping, combine brown sugar, flour, cinnamon and pecans in a small bowl. Cut in butter. Sprinkle over batter.

Bake 40-45 minutes, or until toothpick inserted comes out clean.
