Recipe of the Week: Tomato Basil Pasta with Scallops and Spinach

This is insanely delicious!!! Mark it down for dinner one night this week!



Ingredients
12oz whole wheat rotini
1 tbsp olive oil
1lb sea scallops
mushrooms (optional)
4 cloves of garlic, minced
1 cup white wine, or chicken broth
2 tbsp butter
10oz spinach
1/2 cup of fresh basil, chopped
1 cup of cherry tomatoes, halved

Directions
Cook pasta according to package directions
Heat oil in skillet until hot (but not smoking) and sear scallops, about 2 minutes on each side.
Remove scallops and add garlic. Cook till golden, then add wine; cook until slightly reduced, about 2 minutes. Stir in butter, followed by spinach, basil and tomatoes. Cover and cook about 2 -3 minutes
Combine pasta, scallops, and spinach mixture.
Serve immediately.
